Hello Dave
With new correct sized jets fitted and still misbehaving I would suspect an air leak.
A leak within the carb would be unlikely unless the butterfly spindle and bushes are badly worn.
Is the carb to manifold gasket OK?
Manifold to Autovac vacuum pipe?
Autovac air valves?

Slinden Services in Measham (https://www.castironweldingrepairs.co.uk/) did an excellent repair on my 20/4 starter motor bearing housing, but there must be specialist welders closer to W Sussex than Leicestershire.

It's a left hand thread. It's made this way so that normal engine and water pump/magneto rotation would tend to tighten rather than loosen the gland nut. So looking forwards towards the radiator, turn the nut clockwise to loosen.

One possibility would be head gasket. Gas leaking into water. With the radiator full and the engine running, can you see bubbles in the header tank?
I would try a compression test.
